I want to make a pumpkin roll for tomorrow.
I am not a scratch baker, can anyone help me with this?

If you have a can of libby's pumpkin .. there's a recipe on the back of the label.. I made it the other day!
Here's the recipe I use, please don't be intimidated by this recipe, it's really VERY easy!!
Ingredients:
3 Eggs
1 Cup Sugar
2/3 Cup Pumpkin (Not Pumpkin Pie Mix)
1 teaspoon Salt
1 teaspoon Baking Soda
1/2 teaspoon Cinnamon
3/4 Cup Flour
Filling:
8 oz. Cream Cheese- Softened
1 teaspoon Vanilla
2 Tablespoons Butter-softened
1 Cup Powdered Sugar
In a large bowl mix eggs, sugar, pumpkin, salt, baking soda, cinnamon & flour together until smooth. Pour into jellyroll pan that has been lined with wax paper and very lightly sprayed with non stick cooking spray. Bake at 350* for 12-15 min. IMMEDIATELY turn out onto a towel coated with powdered sugar, remove the wax paper and roll up with towel starting at one of the short sides. Put in fridge or freezer to cool. While it is cooling mix together all ingredients for filling starting with cream cheese, vanilla and butter until smooth. Then add the powdered sugar.
Unroll pumpkin roll, spread cream cheese filling over entire surface and reroll. The easiest way to cut the roll is with dental floss. Just place the floss under the roll and criss cross it at the top and pull, it makes a clean cut and won't distort your roll.
You can also freeze the rolls after you roll them back up then when you need them just let them thaw and slice. There are never any pumpkin rolls left at our family get togethers!!!

For the frosting, I substituted 2/3 c brown sugar and 1/3 pwd for the cup of pwd sugar. Everyone called it a "cheesecake pumpkin roll." Thanks again!
