cuz mine is about to break over my fiance's head!!!!

I have this amazing bread recipe - just plain ol white bread, but it's been passed down for generations. Thought I lost it, found it a month or so ago. Made it tonight for Thursday, it's baking now.

I give him one teeny piece from the first batch to try, and he ATE HALF A PAN ALREADY!!! These are for the holiday, not now! Someone please send me a new rolling pin - the man-proof locks don't work anymore.

Alright, WHAT exactly is Zaxapoaphobia??

And yes, it is a great compliment. However, he just requested I make another (double) batch. Sorry, outta supplies, store's closed, ..... I'd tell him to make it himself, but it's not as much a recipe as by feel. A "handful" of his is not even close to one of mine!

A very strong aversion to royal icing!



Now he's out of luck. Perhaps mention Thursday that half the loaf is in his belly icon_biggrin.gif

Oh, and it's not half a LOAF, it's half a BATCH, and the batch made 3 pans!!! Tells me it's better bread than chips, so I should be happy icon_confused.gificon_rolleyes.gif

I don't think you want the rolling pin I have...it's marble. icon_lol.gif I can understand where he's coming from though...it's hard to not want to dig right in to fresh baked bread. MMMMM!!! I think it's time he went to the time out corner! Bad fiance! Bad!!

Tara- (daltonam) thank you for the link to Zamodes name thingie. I have often wondered myself what that ment. Now I know.


Zmama- I have a rolling pin you can borrow. Can I "borrow" icon_lol.gif The recipe for the bread? Yum.......I would love to try it.

I'd be happy to share, but don't blame me if it doesn't turn out! Like I said, it's more of a "feel" thing. My ex-MIL couldn't make it for the life of her because she uses EXACT recipes. So use your hand to measure, add flour till it feels right, etc, etc. Give me a few minutes to type it up.

Sweetness - marble is fine! He's a Marine, he can handle it, right?

Okay, here ya go! I get a couple dozen sandwich buns out of a single recipe, three dozen dinner rolls. Also good base recipe for monkey bread, cinnamon rolls, and regular loaves of bread. PDF and DOC available.

Doug, YOU SO SMART!!! Hope the formatting stays so it doesn't get confused.

Grandmas Bun Recipe

Original:

Start by adding 2 pkg regular dry yeast (not rapid) to ½ c warm water with 1 T sugar.

3 c water
¼ c butter
¼ c Crisco
Melt these together.

Add:
1 T salt
½ c + 2 T (10 T total) sugar
1 c + 2 T dry milk
5-6 oz condensed milk
Mix thoroughly.

Add:
2-3 eggs, beaten (I use 5 per double batch, but she said 2-3 ???)
Mix again.

Add yeast water.

Add flour.
Recipe calls for 2.5 lbs, which was just over 6 cups. Keep adding till it is dough, not too sticky. It usually takes me about ¾ bag of regular flour plus what I use to knead.

Knead, rise to double, punch down, rise to double again.

Make your buns, cinnamon rolls, etc at this point.

*IF you want to freeze to bake later, do it here. Follow with next step when you are ready to bake. Can also put formed cinnamon rolls in the fridge at this point, and they will rise overnight and be ready to bake in the morning. This was NOT in the original, but was found through trial and error. They are just as good after freezing the dough!

Rise to double again after rolls are formed.

Bake at 350 appx 15 minutes until a nice golden brown.


Rapid Method:

DO NOT add yeast to water. When using Rapid Rise yeast, there are a couple of changes. Reserve 1 c water from first step, mix up the rest of recipe. Add 2 RAPID RISE yeast packets to 2 c of the flour. Add flour, then add the 1 c water from first step. Water should be 120-130 degrees. Mix together, then add the rest of the flour.

You will eliminate one rising with this method. After mixing, knead, let dough rest 10-15 minutes, then form rolls and buns. Let rise to double, then bake as normal.

This bread is nothing special, just bread, but its got a great texture and holds up nicely. Perfect for turkey sandwiches after Thanksgiving!
