Why Do My Cake Balls Crack When I Dip Them?

I have dipped candies before and never had this problem, but everytime I dip cake balls and let them harden, they crack. I am using semisweet chocolate (not chips). I can't use the candy melts, because they need to be non-dairy. Can anyone help me, please???!!! ![]()

Won't adding the shortening make the chocolate "melt" onto your hand when you pick them up?

No. Just add a touch of shortening or vegetable oil. I don't know how much chocolate you're using, but try adding a teaspoon at a time. The oil will loosen the chocolate up without affecting the taste.
I hada similar problem when I dipped frozen cheesecake into chocolate. The chocolate would crack. And like you, I had never had that problem with candy. I was told, and discovered, that since the cheesecake was frozen, it was much colder than the chocolate. I needed to let the chocolate cool down. In your case, your chocolate might be too hot compared to the cake balls. Try letting the chocolate get closer to room temp. And the oil should help to keep it loose.
