Hi, I have been coming to CC for awhile now but have not posted! I love all the ideas and help on here! Now my question is has anyone made cheese cake balls before? I recently made cake balls with marbled cake and homemade buttercream dipped in white and milk choc. but I am making some for a party and would like to mix them up! I am hoping to get some orders maybe for them so any ideas for different types would be appreciated! Also what type of choc. do you guys use when you make your balls? Thanks!

You can make a regular cheesecake recipe without the crust. Bake it and then form the balls as it cools. Be sure to freeze firm before dipping in chocolate. It would taste great with some crunched up graham crackers pieces! As far as the chocolate for dipping, I have found success with choc or white almond bark with Crisco added in during melting. lovincake, the recipe is on the front page under articles. I just saw all of the post about cake balls and decided to make some for Easter. Everyone loved them. It is basically some crumbled up cake with some sort of binder, I used buttercream, and then you ball them and freeze them and then dip them. There seems to be alot of variations and that is what I am looking for. Try them, if your family is like mine they will not last long. My mom ate them for breakfast and then yelled at me about how fattening they were! icon_wink.gif

Cake balls are a great way to use up scraps of cake, however I usually have to bake extra cakes to have enough to make the cake balls. You can fill them with combinations of many things, jams, liquors, nuts, coffee creamers, dried fruit bits and chocolate chunks/chips/shavings.

I dip mine in melted chocolate melts because they harden quicker but any good quality semi-sweet or white chocolate will work. I found that using the Chocolate Pot makes live easier. You can see my holiday Cake Ball trees in my pictures for a few ideas.

Good luck - you won't be able to keep them around once everyone finds out you make them.

That brings up another question...sorry alot of questions I know....how do you fill them or are you just talking about what you mix in the actual cake ball? Thanks so much! icon_biggrin.gif

this comes at just the right time. i just did my wilton final and it's sitting on the cabinet uneaten. i am going to make cakeballs tomorrow!!! thanks alot!!! linda
