I am looking for a recipe for vanilla fudge. Anyone ever had any luck with this? I could possibly use white chocolate, but am aiming for vanilla. Thanks to anyone who can help.

I had vanilla fudge that was really good at a friends house and this is the recipe she gave me.
1 pound vanilla chips (Tollhouse)
3 tablespoons unsalted butter
1 can (14 ounces) sweetened condensed milk
Line pan with parchment paper.
In a medium saucepan, heat the chips and butter together, over low heat, to melt the chips. Stir in condensed milk, once chips are melted and stir to make smooth. Remove from the heat, and beat slightly with a wooden spoon.
Spoon out into prepared pan and smooth with a metal spatula. Let set or refrigerate until fudge can be cut. Cut into squares. Keep refrigerator or in a sealed container.
I haven't made it yet, but it was good when I had it.

When you say vanilla chips dp you mean white choclolate? I was at the store today and could not find vanilla chips?? thanks so much...
Also does anyone know if you can just omit nuts froma fudge recipe? sometimes it says optional, sometimes not, but I can not have any nuts...will it affect the recipe??

That is a good recipe--and easy! I have also made it cookies & cream fudge by just adding a cup of crushed oreos, very good, but very very rich! And yes, you can just leave out the nuts, it won't make a difference in your fudge!
I make that recipe in a 9x9 square pan and line it w/ foil then I can just lift the foil to remove the fudge to make it much easier to cut!

I also use the recipe for Nestles white chips. Just remember to butter whatever you are using to pour the finished product in or it will never come out. I omit the nuts for DH but add pecans and dried cranberries to some. The recipe is very easy to change.
