I've been asked by one of my employees to make a lemon cake and icing for this weekend. I saw some recipes on here but I'd like to know if there is a favorite here that some of you have tried or a recipe you wouldn't mind sharing-it can be box or scratch. TIA!!

I use the enhanced cake forumla recipe with lemon Betty Crocker mix, and add 2 tbsp lemon juice, and the zest of one lemon. It's delicous, and the texture is so soft and wonderful.

Nearly all the cakes I sell to customers come from one or the other of those books, and everyone always loves them - I can see why they do so well! Most popular are the carrot cake, chocolate buttermilk cake, vanilla birthday cake (although I make mine using buttermilk instead of milk), and the Devil's Food cake.
