are in. Some of you may remember on April 13 I wanted to do an experiment to see how well a Fondant covered cake would freeze for up to 6 weeks. The cake is a two later 9" round with ganache filling, frosted in a liberal layer of buttercream then covered in fondant and decorated in all fondant flowers, border and leaves. I placed the cake into a regular cake box, wrapped the box in plastic wrap & taped it well, wrapped the plastic in two layers of heavy duty foil & taped well, then wrapped two layers of brown paper over the entire thing & taped that well. Into the freezer it went.
Last night, May 28, I pulled it out of the freezer and took all the wrapping off, opened the lid on the box and dropped the front flap of the box down, set a small personal sized fan just above the cake's height level and turned it on to blow on the cake overnight as it defrosted. The cake came out looking just as it did when I put it in the freezer.
At first I was a little concerned because it started sweating right away and feared the fondant was going to become a big glob of goop surround some chocolate cake! But, the little fan kept the moisture at bay and this morning when I came running downstairs to check on my much anticipated experiment, it was not possible to tell the cake had not just been baked and decorated this very morning.
How dry is the cake after being frozen for 6 weeks?? IT'S NOT! The cake, buttercream, fondant and fixtures are just as moist and delicious as they were the day they went into the freezer. I was thrilled!

After reading several cc'rs questions regarding freezing fondant covered cakes I decided to do this experiment and hope it helps some of you out one day if you find yourself in a crunch, or, just wanting to know how well a fondant covered cake freezers. The three pictures below are the cake when first made, the cake this morning after it had thawed and finally the cake cut in half so you can see it is very much in tact and doing well.

Beautiful cake! I just had my wilton final tonight. I wish mine looked half as good as yours! Sorry, no pic yet. Also a big thanks for being the scientist and doing this experiment. That fan you used must be the trick! Thanks again.

In order for others to recreate what you did. Would you mind sharing what brand or recipe of fondant you used/made?

If you ever want to experiment with sending a fondant covered cake by U.P.S. or U.S.P.S.....I volunteer to be your test subject. icon_lol.gif

So glad it worked out for you!

I have frozen a fondant covered cake before, but I left the cake in the box and all the plastic wrap etc on it and defrosted it in the fridge. It was also perfect once defrosted!

Are all the flowers etc fondant too? I'm curious to know what would happen if you had gumpaste accents on there!

Satin Ice is the fondant used on this particular cake.

JanH, one of the thoughts in my mind when I started this experiment actually involved the possibilities of shipping a freshly frozen fondant cake wrapped like this one was and shipped with a small block of hot ice to ensure it would not thaw for at least 2 to 3 days. I honestly think if packed tightly in a styro cooler placed inside a box it would make it just fine. I don't know........maybe someone has already tried this?

Doug.........I LOOOOVE watching Alton Brown! icon_biggrin.gif My husband does too but only because he thinks he is funny. I like learning all the scientific stuff he comes out with and the laugh I get while he is teaching it. Great guy!
