AHow do you hold mini cakes still while icing them?? Made flower pot cakes for Mother's Day and ended up stabbing them with a chopstick to hold them down, but they still spun around the stick. I had ganache everywhere.

Use a smear of icing or chocolate to attach it to the bottom board.
I'm thinking some sort of "bed of nails" contraption. I didn't have time to come up with anything because it was 1am Saturday. My kids were not cooperating with mommy's caking schedule during the day!
I had that issue a few weeks ago, too. It would be nice if Ateco made a mini turntable top to fit in their big turntable. It would be easier to get it centered. And little nails to hold it in place would help as well.

AI have a self adhesive sandpaper disc (bought at hardware store, made for electric sanders) stuck in the center of my turntable, and it holds little cakes just enough. I still have to go light on the spatula, but it works without ill effects.
