Hi everyone. I'm trying to discover some new cake/icing/filling combinations and was wondering what your most requested ones are. Anyone willing to share? Thanks!

Hello,

My most requested cakes are

1. Vanilla bean cake with lemon curd filling and white chocolate mousseline buttercream.

2. Vanilla bean cake with raspberry/strawberry fruit cloud cream filling ( which is just homemade fruit puree, sugar and whipping cream stabilized with gelatin ) and white chocolate mousseline buttercream.

3. Chocolate domingo cake filled with hazelnut praline light whipped ganache and iced with chocolate neoclassic buttercream.

4. Carrot cake iced with white chocolate cream cheese icing.

5. German Chocolate Cake

All recipes are found in the Cake Bible and Rose's Heavenly Cakes.
These are the two books that I use constantly.

Sugarprincess- sounds delicious! I gotta get those books.

My most requested cakes are carrot cake with basic cream cheese and redvelvet cake layered with white chocolate cheesecake and topped with cream cheese and melted white chocolate.

I have always wanted to make red velvet cake but have not gotten around to making it. I have heard it is very delicious with cream cheese frosting.

My top 5 most requested cakes:
1. Carrot with cream cheese icing
2. Triple Chocolate(choc. cake, choc. buttercream, choc. ganache)
3. Boston Cream(butter cake, bavarian cream, choc. fudge icing)
4. White with raspberry filling & white choc. buttercream
5. Hummingbird(pineapple, banana, & pecan cake) with cream cheese icing
Cakes with alcohol also sell really well such as chocolate grand marnier, chocolate bourbon pecan, and my peronal favorite is chocolate cake with irish cream and espresso.

WOW, these all sound so delicious! Sugarprincess I must get that cake book now! I'm really just starting out and do mostly cookies and cupcakes but I'm getting more call cake lately and am a little intimidated with trying new flavors and recipes. I think I better get to baking and try some!

I see that this is an old thread but hope that you check it.  I just made the Domingo and the All American Chocolate cake- awesome texture and taste with the Domingo being more favorable with more of a chocolate taste.  But both are dry! These were test cakes, so I tried adding simple syrup- still tasted dry on the way down the throat, like I wanted a glass of milk ASAP. I took them out at the lower end of her time for doneness when the cake sprung back to light touch. Even tried some of my stock buttercreams to see if that helped, but still sensed dryness- enough that I wouldn't serve it if needed.

Any suggestions?

I agree.  I had a chocolate cake bake - off last year, and tried well over a dozen different recipes.  I found the all american chocolate cake to be dry, and not deeply chocolate in flavor.  (I didn't try the Domingo). My trial included Toba Garrett, Martha Stewart, Sylvia Weinstock, Hersheys, and recipes from King Arthur, and a number of other sources.    The winners were Deluxe Devil's food cake from the back of the Softasilk flour box, and the double chocolate cake from epicurious.  They are very similar.  Moist, not dense, and with a very rich chocolate flavor.  My go to is the Deluxe Devil's food because it is easier to make for essentially the same results.  Give it a try!   I  found RLB's white and yellow cakes to be dry as well.  So far, none of her cakes has been my favorite although I certainly haven't tried them all!.  I do like her fruit filling and curd recipes.

Thank you.  I did make the Double chocolate cake.  My group and my husband liked it, was not dry, but I didn't care for it- possibly since I like milk chocolate and it was just too dark of a taste for me.  I put chocolate ganache on the outside, covered in fondant and chocolate raspberry in the layers. My group took home all the remaining slices, but not my favorite.  I'll give the others a try.  Thank you very much
