I'm icing my cookies with glace and I need to put 2 letters on the cookie. I'm interested in trying the tappits, stencils, or the FMM funky letters. I'm thinking the FMM funky letters is for fondant. Would love to try that!! Could someone give me their thoughts about the tappits, stencils or using the fondant letters on glace. My glace is white and the letters will be black.

I have never used glace before - but I have the funky letter tappits. (The funky letters are actually tappits). Anyway, it sounds like you haven't used them yet. They can be a little frustrating at times. I only use them with gumpaste (because they don't work well with fondant). I roll the gumpaste out and just let it dry for at least 5 minutes. And then I put a bunch of cornstarch on the gumpaste and also on the tappit. And then you literally tap the tappit on the counter. Sometimes it comes out and sometimes you make 10 before it's perfect.

Long story short, if you are going to use this method for some wedding cookies or something, practice with the tappits first!

I do love them - but it's just something you have to figure out.

I have the funky & script tappits. They are frustrating.

I've heard that gumpaste is way easier to work with but have never eaten it. I understood it to dry rock hard? If this is not the case?...cool, because I'd love to incorporate that medium for monograms with tappits. It sounds like less headache!!!

Because I thought gumpaste was not something you'd want to eat, I've been using the 50/50 recipe on CC for rolled buttercream and marshmellow fondant. You have to roll very very thin. Cut into "strips" and then push the selected letter into the "fondant". And, yup - sometimes it comes out properly, sometimes not so much!

Take a look at how "deep" the tappit is. You'll see, that you have to roll super thin. You don't want to fill up the tappit with fondant. You for sure won't get it out of there. I've also rubbed a tiny bit of shortening on the edges of the tappit. I've never let the fondant set up....but I bet that would help too!

Be careful when pulling away the excess, use a craft exacto blade, or one of those fondant tools. Take your time. One last thing, if you get fuzzy edges, I've read some ladies like to paint the edges with a damp brush. It softens the "fuzzies" and makes it smooth.

I have a monogram in my pics I think. They were made with tappits. Just takes some patience! icon_smile.gif

Oh - one other thing about the color choices....

I'm not sure about real fondant vs. the alternatives vs. a mix of glace and fondant....but, do you think you might have bleeding?

There was a lady on CC who made these awesome cupcakes with zebra stripes and she placed them on right away with no problem. But, I am new to this fondant thing as well & tend to play it safe.....

You can always let your glace dry right? Could you attach your monograms after the fact with a tiny bit of piping gel?

Again, I'm not sure how the piping gel affects the glace. But, I've attached my fondant alternative to fondant alternative with piping gel and it stuck just fine.

Not sure if glace gets "funky" like royal. Just a thought....

I don't know if this will help you, but I use dipping chocolate for my monograms. I just print out the font I need in word, put a piece of wax paper over it, and pipe with the chocolate over the letter. Sometimes I pour the mini non pariels over the letter and they turn out really cute. And they're much sturdier than royal icing letters.

I have bothe the script and funky letter tappits and just love, love, love them. Here is my method for cutting our the letters :
- Roll out fondant thinly and leave for about 30 minutes to dry.
- Get a piece of kitchen paper towel and spray a little bit of the cooking spray on the paper towel and wipe it across the letter that you wish to cut out.
- Cut our letter and tap gently and the letter will just drop out.

I never have any problems with the letters getting stuck. If anything, the opposite sometimes happens and I find the letters flying across my kitchen. icon_biggrin.gif
