So, I've done my research, and found no less than seven threads on doctored carrot cakes (including the Cake Dr's recipe and others not based on carrot cake mixes exclusively). Many of them sound wonderful, and there is great emphasis on the "moist" aspect, but I was wondering if anybody had a suggestion for a truly carveable carrot cake recipe (doctored or no). I plan on defying gravity a little bit with a Grinch cake I was asked to make, and don't want a too-moist cake crumbling on me.

because of all the add-ins (carrots, raisins nuts, etc) this is not a good stable choice for carving. I think it is a big risk.

What if only carrots, no raisins or nuts? Still probably not a good idea, right? She specifically requested carrot, and I was hoping it would work out ...

I think if you only use carrots and grate them very fine, you might be able to carve it. But my experience is that a carrot cake is rather heavy - so the "defying gravity" part is corncerning me a bit...

I have a recipe for a carrot cake, that I do not use any raisins in. I do use nutes, put they are finely choped, no huge pieces. I think it would be a great recipe for carving. And it has a great taste, is extremely moist and dense enough for carving. It is from scratch, not doctored. I think I will post it in the recipes, Its really tasty too!
