i do it too, i wrap my cakes in saran wrap while still hot and put into freezer. if you think about it the steam from the cake cant escape so that moister stays in the cake. so no need for the simple syrup brushed on top to add moister. the freezer, the saran wrap and the hot cake did it for you. and i crumb coat it frozen, but let it thaw alittle before finally coat.
