Melvira.. Hope you can answer this ? I only tried the bettercream 1 time and it was nasty and stayed looking like melted coolwhip ! I have some in my freezer right now I never used yet ! I have a few 32oz containers , what do I do with it ? Defrost and whip like whipped cream ( made from heavy cream ? ) thats what I tried before ! It never got fluffed up ? Like I said .stayed like melted coolwhip ! I havent tried it again ! What are the normal steps to use it ! HELP !!! Thanks ! Or anyone else that can answer, Please do !!!
Ok, pull it out of the freezer and let it sit for about an hour at room temp to thaw. Give it a good shake in the carton to make sure you get all the good stuff off the bottom! Pour it into your KA or other suitable mixer and turn it on medium high and whip the heck out of it! Just like you do with whipped cream. It may take a few minutes, but it will definitely fluff up. If it doesn't, there is something wrong with it and you should take it back! It turns out fluffy and lightly sweet like a nice sweetened whipped cream. Add dashes of flavoring (any flavor you like) to compliment the cake flavor.
something else you can try... melvira - i dont' know if you do this, too... but when i make whipped cream from heavy cream, i chill my attachment and my bowl for just a few minutes in the freezer and i always get really light fluffy whipped cream

I do always chill my attachment and my bowl whenever I make whipped cream ! Good thought though . Mel, I do know when I made it before I bought it frozen and came home and let it sit in the fridge overnight So it was completly thawed ! Does that make any difference ? Then I whipped it straight from the fridge ! Should that have still worked ? Because thawing at rm temp for about an hr like you said , is it still part frozen when you go to whip it ?

I always chill for whipping cream, not always for Bettercreme. Now, to be honest, you don't have to let it sit at room temp to thaw, that is just a suggestion. I have pulled it from the freezer, (you may notice it never quite freezes solid...?) given it a few minutes and then squeezed it into the bowl in blops, and whipped it. It was super cold, but it worked just fine. Leaving it in the fridge should not affect it at all! You can leave it in the fridge for like a week after you open it (if you don't use the whole batch) and still whip it up and use it! (You can also refreeze... shhhhh... some people will tell you not to! But as long as it's well covered so as not to get freezer burnt... go for it!) I honestly cannot imagine why it didn't work for you! Oh wait, doesn't it say on the back of the carton that it may not work for incredibly good looking women who look younger than their actual age? Maybe that's your problem. You're just too attractive.

Because it just never whipped at all , And I never have trouble whiping reg whipped creme ! Thanks!
Yes, definitely try the malt syrup with it. And I add a pretty strong amount without it hindering the whippability of the liquid! (Is that a word? It is now!!) And yes, if it doesn't whip up, you have either a bad batch or just the wrong product!! (Mislabeled??)

Now wait, don't say blech before you try it, the ones I have made are FABULOUS! AND, I have made them with reg milk and yogurt.... We do not eat vegan, but seriously you would never know!
I have made the Vanilla one, chai latte, chocolate, agave vanilla one, and the maple crunch. My DH say maple crunch is the best I have ever made.

Thanks soooo much for starting this thread!!! My focus is primarily on cupcakes and mini cakes. I've spent the last year and a half researching "Cupcake" recipes. I don't have much success using cake recipes for making cupcakes. I want a delicious cake taste and a beautiful dome.
I'm still searching for a fabulous vanilla cupcake recipe, I've tried countless recipes, and cannot get a delicious taste, with a dome on top. Does anyone have a moist yellow cupcake recipe they care to share?

Melvira Yahooo I found it !!! The Hershey,s whoppers choc malt syrup! I went into Wallyworld and there it was waiting ( begging ) me to bring it home ! I also bought the DULCE de LECHE just because.. well I couldnt leave it standing alone ! I just love anything malt flavor!!
I just made Mucho Margarita from the vegan cupcake book. I am not vegan just trying to be healthy. These cupcakes are too die for. I cut the recipe in half cause I didn't know if I would like them and wish I'd made all 12. They are moist and just rock!!!!

HAHAHAHA!! You had a buttercream sundae!!! Screw the ice cream! You know, I used to use malt powder but it tended to give the icing a grainy feel unless you dissolved it in liquid first, so I was walking through WallyWorld and that bottle caught my eye. If you've looked through my gallery pix, you know I love me some Whoppers... so it just seemed to make sense. One of those things where it just *clicks*, ya know?

As far as getting a nice ganache surface, the most important thing I can stress is to strain the finished ganache through a seive. Then I pour it over the cake but let it bounce off a spoon first (does that make sense?) so it doesn't mar the icing underneath. Then I also use the spoon to work it to the sides and down. Any specific q's... just ask me!!

Yah, I think we need a cupcake forum! I've killed a lot of time lately checking out the many cupcake sites. I'm more enthused about cupcakes each time I start reading about them. I might try the peanut butter recipe posted here. I forgot who posted it but thanks! Sounds wonderful with whipped ganache.
Melvira, I'll be straining my ganache from now on. I made some yesterday and didn't realize the chocolate chips weren't all melted until I started icing my cake. But it was for us and it's all gone now anyway. If if it were for a customer I wouldn't have been happy with it.
Penny727, I feel for you. I'm working on taking off a little weight too and having a tough time. If I'm baking for others it's no problem staying away from the sweets. But when I'm trying out recipes it's harder. I find it's extremely helpful to take cakes to my former work place so they aren't here at home to tempt me. I think I'm going to start taking them to other places where my friends work, and ask everyone who tries some to do a quick written critique in the form of a questionaire. Even men can do that!
I'm trying to build up my list of flavorings for cakes and icings. This is the best way I know how. I also might check out what churches in my area have a coffee hour on Sunday's and take some cakes to them. I don't plan to do this every week but it's a good idea for when I try something new.
