Ice Cream Cake Frosting

I'm making a 100% ice cream cake for my son's birthday but don't know what type of frosting to use.

Anyone made an ice cream cake before that didn't have an actual 'cake' inside?

I've made the DQ cake several times, but not frosted it.

All I've done is used Oreo crumbs around the edges and piped on top!

What I do is buy and extra 1/2 gallon of vanilla ice cream. I let this soften (not melt all of the way) enough to stir. Place ice cream in chilled stainless steel bowl and then add whatever color of flavor I need to it and stir it in well. Spread this all over the "ice cream cake" and place cake back in freezer. Once the "frosting" has hardened, I then use my buttercream recipe to pipe on a border and whatever designs I would like.

I'm a cake decorator for Dairy Queen. I know at DQ here in PA we use Frostin Pride or Rich's. Heres a link

They just come frozen in milk carton type containers. I thaw them for 24 hours in the fridge, then Whip them up in the KA mixer. Its absolutely Delicious!! You can make roses, borders, writting, anything you can do with buttercream.

You can probably go to a local bakery (tops, quality, walmart, etc) and ask if they will sell you a carton or two. Alot of places will do that.

Daniellemhv is absolutely right. I used to work at an ice cream stand and I used Rich's or Super 50 but I don't think that they make Super 50 anymore. That was years ago. I would go with Rich's and it will go in the freezer and be okay.

I found in the frozen section Rich's brand RichWhip Non-Dairy Topping. Is this what you're talking about?

I just whip that up and use it to frost the cake and decorate? I'm thinking of making stars with it - will that hold up?

thanks for all the great info. I'm going to do a tester mini cake and then as long as it works out okay, I'll make the mickey mouse cake for my sons birthday. I'll be sure to post a picture of it.

Is there anyway to make that Whipping Cream flavor with chocolate? Could I just add some chocolate syrup (like hershey's) to the cream while I whip it up?

At Publix they use Super50 for their ice cream cakes, but they add milk and cream to it.

Ok, I thought I'd send you guys an update, after a test which didn't turn out so well, I decided to take the easy way out and went out and ordered an ice cream cake. I was happy with it, although I know the Mickey Mouse face would have been cuter.

I'm still looking to see after I whipped up the Rich's Frozen Non dairy whipped topping, do I add something to it to make it sweeter? It tasted kinda bland for the top of the ice cream like it needed some sweetness.

I'm going to keep trying this and as soon as I can get an ice cream cake made with a character pan, I'll be sure to post the pics.

I think that happened because you may have used another Rich's product that has confused some people on here. If it was not in a pink and white carton it wasn't the right one. It is called Rich's Bettercreme. If I am wrong then I apologize in advance just wanted to help icon_smile.gifthumbs_up.gif

Ok, I thought I had the right one. My container was blue with alittle red and white on it.

Yup, that was the wrong one. Don't feel bad though, I'd bought it before thinking it was bettercream as well!!! I think normally you have to ask at the bakery to see if they have it and will sell you some...
