Freezing Cakes, Why Does This Happen????

I bake and freeze my cakes ahead of time, since I work a full time job.

What I have noticed is, when they thaw out, they are really wet/sticky on top. Now, I do leave my completely wrapped while they are thawing, could that be the problem. Should I unwrap to thaw??

I do let them completely cool before I wrap and put them in the freezer. I wrap in saren rap and the with foil.

that happens to me sometimes too. I really doesnt bother me because I usually skim off the top when I level it anyway. But I totally understand what you mean. I leave mine totally wrapped too and the condensation is on the outside of the foil. However, I have read in other books (I think the cake mix doctor) where she suggests to open it up a bit. I guess you could expirement.

Leaving them completely wrapped will promote condensation. Why do you thaw them before putting them together? Take them straight from the freezer and assemble - they are much easier to handle when frozen. I've been doing it this way for 15 years and never had a problem.

Thank Luby... I have heard different concerns about decorating them frozen. I'll have to try it.

I use my 3' pans alot and is it hard to slice them while they are fozen??
I know that I stuggle handling the large cakes(14in) and it is easier frozen that is definately for me.

I love the out come when I 'm done, but during construction I am thinking, I ain't doing no more. Escpecially the large ones.

Any onther thoughs on decorating while frozen??

I also ice while frozen, but if I have time I wait for the cake to thaw after iced because you may get condensation droplets on the icing. It will re-absorb into the icing after a short while and I then I decorate.
But if I am applying fondant accents the condensation helps the fondant to adhere and I decorate right away.

Hope that helps!

Icing frozen really locks in the moisture to the cake and I get my best compliments from them.

I,too, bake and freeze my cakes but I don't use foil. I just wrap them in multiple layers of Sam's clear wrap and then straight to the freezer.

Could the condensation from the foil be leaking through your clear wrap and down to the cake?

I don't think so. The foil on the inside is dry, the moisture is on the out side. And it appears only the top of the cake is sticky, not the bottom or sides.
they taste great and are very moist, just difficult to manage.

I am going to try icing while frozen. Hey, I game for anything that make my life easier...
