I need some help with what might be happening with my cupcakes. They are baking with what seems to be a "blowout" to one side. I have done the obvious things - checked that oven and racks are level w/ appropriate device, checked temperature of oven, checked the recipe in another oven (it bakes fine there). It is a Vulcan Electric Convection Oven and I bake at either 300 or 325 degrees depending on the recipe. This does not happen w/ my cakes. The cupcake wells are filled w/ a #20 scoop which fills them to about 2/3 full for the correct baking height.

If you are using the convection fan, that could be the problem. the cupcakes are so small, they have no resistance to the fan. If you can't turn off the fan, you can try rotating the pan at about 10 minutes.
I'm having the same problem with my Vulcan, did you find ways to to fix the problem?

Adjust the placement of your racks. That fixed mine perfectly. The reason I tried that was because this oven was a duplicate to one I already had. I decided to try to use an extra rack and it did the blowout thing. I put it in the same configuration as the other and the problem was solved.
