Looking For Turtle Filling

Hi everyone! I am looking for a recipe that can be used as a filling for a wedding cake. The bride's favorite flavor is turtle(pecans,caramel) and I was going to make my own from scratch but I think it always comes out too hard in the end. If anyone has a recipe for this it would be great. I was thinking of doing a caramel topping that is used for icecream and chopping up pecans and mixing that together. Part of the cake will be traditional white and the other part will be chocolate. When I think Turtle I think that chocolate should be added in with the caramel and pecans but do you think that the chocolate cake could take that place? I was thinking of doing a thin layer of chocolate then putting the caramel and pecans on that but I'mnot sure. I'd appreciate any ideas!

The bride is very easy going not really set on what she wants but does want to do a turtle filling. I suggested to her about using a caramel topping instead of me making it from scratch and she was all for that -very easy to please. So, I am not necessarily looking for anything outrageous, just something simple but that taste great!! This is my 3rd cake for a friend of a relative and I have never met her before now -so it's my first cake for a stranger. I still want to do my very best -of course! And I want to have her completely pleased with the results while also keeping the cost down where I can. Thanks a bunch!! icon_wink.gif

I think I would put a whipped ganache as the filling, then sprinkle chopped pecans and drizzle caramel.
