Do you know any recipes that keep that long. I am making a chocolate mud cake, but I am looking for different cake to go with it. Any ideas?

I positively know that fruitcake will keep that long!!!

A week at room temperature, in a warm climate is probably too long. Mold is most likely to be an issue. non-dairy items won't 'spoil', but it certainly will not be fresh.
