Please help! haha

I've never made this one before, (it's the one from this site, by Antonia)

When you mix it up is it supposed to have a slightly sour/bitter taste to it?

I just made a batch, and I can't figure out if it's right or not.

I use Alice's icing, but I am fairly sure it shouldn't taste sour. Is there milk it that one, and have you checked your ingredients individually?
Did you add red? that will change the taste a lot.

You can try adding some vanilla.

I haven't made Antonias yet. Someone will be along soon though it is a very popular recipe.

Maybe, change your title to HELP with Antonias icing please.

There is no milk and I just made it, plus I only use tasteless coloring.

There are only four ingrediants...meringue powder, water, cream of tartar, and powdered sugar.

If you add too much cream of tartar it will taste bitter. Maybe that is the problem....not really sure.

I just tasted the cream of tartar, and it tastes sour...does anyone know of a replacement for it?

*Never mind on that, the replacement is lemon juice. I don't think I have enough meringue powder to do another batch.

I'm so screwed icon_sad.gif

Royal icing used to be made with egg whites, lemon juice and sugar. You could try this recipe from G-Rho... Good luck!
Royal Icing, another recipe
it's 1/2 teaspoon of cream of tarter per pound of powdered sugar and 2 large egg whites. I just threw it in my mixer and let it go for about 7-10 minutes. I also used the wisk beater as well. It was a beautiful thing..I tried the Wilton recipe with the merengue powder and it just didn't work for me. I saw this on one of those baking shows on the Food network. The baker who makes the wedding cakes @ Disney did it. So simple! G-Rho

It may taste sour now, but once you put it on your cookies (I use the no-fail recipe), it is a "marriage made in heaven"!

It does taste kinda sour when it's freshly made, but after it's on the cookies and has time to dry, it's a whole different taste!

I have been using her icing recipe since I started doing cookies, but just today tried flavoring for the first time. I put about 1/2 tsp of lemon extract in the batch I made, and that masked the sour taste of it very well.

You could try adding flavoring - lemon, orange, almond would all be good, or just about anything else, I guess.

Also, a note about using lemon juice in icing, there have been many posts here from people who were having trouble with the icing colors changing after mixing in the color gel, and in many cases it was a result of using lemon juice in the icing. If you do try it with lemon juice, make sure to test your colors before mixing up a large batch to make sure you get the results you want.

hth!
Laura.
