Help me please! I've only been decorating for 2 months now and I have a co-worker that is getting married 2 weeks from now. She has asked if I could do her wedding cake.

So, with it being my first one, I obviously want to do a good job.

Here is my question.... I made a strawberry cake a few weeks ago that she loved. It was a strawberry cake mix from DH that was torted and had fresh sliced strawberries and a cream cheese & real cream mixed together between the layers.

Will this freeze well for this to be her top layer cake to keep for their 1 year anniversary?

How do I wrap it up for them too? I plan on using bc (Crisco).

Thanks!

The fresh berries won't freeze well. When it thaws, they will be mushy and wet. for the topper, just substitute a good quality strawberry preserves. It will freeze better. Box the tier, and wrap it a couple of times with plastic and/or heavy foil. The more the better.

Cake itself doesn't really maintain its best features when frozen for a year....why not encourage your coworker to get a fresh cake in a year's time? Offer her a coupon for a certain sized anniversary tier and keep a picture of this cake to reproduce it?

Regarding the icing - have you tried Italian Meringue Buttercream? Martha Stewart's recipe is great, and it is sooo much easier to smooth than Crisco buttercream.
