I need help with pricing....

I just did a wedding cake 12 x 4inches, 10 x 4 and 8 x 4 filled with fresh strawberry filling (recipe from this site) iced in buttercream, roses all around the top edge of all three cakes and string work (not the greatest). I charged them $80.00 and I know I way undercharged but am wondering buy how much. Please keep in mind that I am in Canada and cakes aren't as much of a focus here.....where I am anyways!

Wow, that is cheap, i think the best thing for you to do is to ring around local bakeries and ask for the price of a cake like that, at least you'll get an idea of what the price range is locally. I did this cake when I was first starting out, it has one extra tier than yours(6, 8, 10 and 12),

I had no idea what i was doing and I charged AU$365 (US$280), that was WAY undercharging for the prices around here, if i was to sell it now, i would charge AU$550(US$420) AT LEAST : )
But your best bet would be to ask around your area : )

For that size cake I'd charge $400 or more~ I haven't charged enough in the past but let me tell you I do now! I haven't really wanted to do much of decorating lately because everyone frowns at the prices. They need to understand there's a lot of work going into this. Your customer got a steal if you only charged then $80. Make it worth it & charge more. Good luck!!

Hey TC--

One demo at ICES told us "If they want a per serving cake, I can do a sheet cake. What you are paying for is the artwork."

I whole-heartedly agree with that.

I would figure the number of servings and start there. I don't have a reference in front of me (or the patience to look at the moment icon_smile.gif ), but you should have charged at least $2.00 a serving for what you're describing (because of the roses and fresh filling).

Gibson, I was in the same boat a few weeks ago. I did my first wedding cake and way undercharged the bride. I should have gotten $550 for the cake. I found that out after the fact. I only charged her $290. It was a 12, 10 and 8 square Martha Stewart Apple Caramel with cream cheese caramel filling iced in buttercream. I spent at least 40 hours on it if not more. I was so mad at myself. But live and learn. I know what to charge now and that's probably why I haven't gotten any orders recently!! Oh Well.

Same thing for cakes and cookies. It may be slow to start but that will change. I can definitely attest to that.
