I have a bride coming over for a cosultation this week and she sent me some pictures that she likes. One of them is a four tiered square cake, made to look like presents. (with the bow on top) Each cake looks to be about 6" tall. How do you factor that in serving sizes. Do you keep it the same as a 4" high cake, or do you add more servings?

If you use the Wilton charts, a wedding size serving is 1x2x4.

Who doesn't like more cake!

Cut bigger slices as 1x2x6 (and charge for an additional layer for each tier or 50% more per serving.)

If the added expense of the tall tiers is a problem for the bride, she can opt for 4" tiers and get a similar but not exact copy of the present cakes.
