Does anyone know of a good cream filling recipe that I can use to fill cupcakes with? I appreciate any help you can give me. Thanks so much!!!

I have been using my favorite buttercream mixed with jam, marmalade or curd. Easy and great flavor.

I have 2 I like. The first one is my favorite but needs refridgeration. It is here on this site. The filling for the Giant Ding Dong cake in the recipe section.

The other was given to me by a CC member. It is twinkie like filling and it doesn't require refridgeration.

Twinkie like filling
2 teaspoons very hot water
rounded 1/4 teaspoon salt
2 cups marshmallow creme (1 7oz jar)
1/2 cup shortening
1/3 cup powered sugar
1/2 teaspoon vanilla

Combine the salt and hot water in a small bowl and stir until dissolved. Let this mixture cool. Combine MMCream, shortening, P sugar, and vanilla in a medium bowl and mix well with an electric mixer on high until fluffy. Add the salt solution and combine

Makes 1 1/2 cups.

That twinkie filling is very good. I used it with a twinkie cake recipe, both of which you can get from copycat recipes or topsecretrecipes, just do a google search. Tasted pretty close to the real thing, except I glazed the cake with a white chocolate ganache, yum.
