Does anyone know where to get recipes for sugar free stuff? Can I use Splenda instead of sugar? I have a customer who's mother is diabetic and wants a cake (go figure) How can I make a cake that she will be able to eat and have it taste good? GAK! Always the sugar addict who has to do sugar free stuff.....lol

Actually, most SF stuff is mostly not very nice. Try the Splenda website, but be sure to use LESS than the recipe calls for. The taste comes through way too sweet. example 1 cup-use about 3/4 cup.

Also, it seems to taste better if some natural sugar is included. As for icing, in my opinion as a diabetic, I prefer real whipped cream with vanilla and a bit of Splenda. you can't do much more than borders, but is sure tastes terrific.
