I just had a girl call me to ask me to do her wedding cake. The wedding is APRIL 7, 17 DAYS FROM NOW!!!!! This is the first wedding cake I've been asked to do and I'm a nervous wreck. I told her I'd have to get back to her, since I know for sure I'm going to be out of town some part of that week, I'm just not sure yet what days. She seems that she'd be pretty easy to work with, though, because other than round she said she really didn't care what it looked like. Sounds easy enough, huh???

You could do something simple and you can make bc icing ahead of time and you could even make your cakes ahead of time and freeze them if you'll be out of town.

since this is the first wedding cake you've done, don't underestimate any of your abilities and undercharge someone, ok?!?!

Good luck!!!

I agree do something simple and elegant something you are very comfortable doing, The Swiss Dot looks very elegant and simple to do, along with a nice border and maybe a few flowers.
Make sure you give yourself enough time to decorate the day of or before the wedding.

I know exactly how you feel! I did my 1st wedding cake 2 weeks ago, and I had less than 3 weeks notice too! We did do as much as we could ahead of time (flowers on the bridge, icing, making boards, buying supplies) and everything turned out great! I work full-time too, but I was lucky because the reception wasn't until 8PM Saturday, so we got started 1st thing Saturday morning. I do hope that I have more notice on any future wedding cake orders, because it was stressful, but it can be done! At least she is leaving the design up to you so that is good - you should make it as easy on yourself as possible! And it's a good feeling to have the 1st one under your belt! Good luck to you! thumbs_up.gif

I made a VERY simple wedding cake for my son. It was my first and I was nervous as heck, too! I went with a stacked the tiered cake, all buttercream, with swiss dots...very simple. I sure didn't want to attempt tiers! I wish I knew then what I know now about smoothing icing! LOL It's in my pics.

DIL wanted fresh flowers, so that was SUPER easy to accomodate. She purchased the flowers (same as the ones they used on their centerpieces) from a reliable source who grows organically. I just wrapped the flowers in saran wrap before inserting in the cake.

Also, I flew down to Virginia to make this cake for them. I made the cakes a few days ahead and froze them, made the buttercream two days before and crumbcoated the thawed cakes, then did final icing the day before, stacked on site and finished the borders and dots and added the flowers.

Good luck to you. Be sure to post pics! icon_smile.gif
