Filling The Nite Before??

Was wondering, I just baked and prepared the raspberry mousse filling along with the buttercream frosting. Should I wait till morning or can I assemble the cake tonight. It is for tomorrow nite and will be covered in fondant????

Yes, you can. sometime I do mine 2 days before.

Mousses are generally perishable. You could fill the cake tonight as long as you refrigerate it. Then you could cover it with fondant tomorrow.

It shouldn't if your mousse is stable and not too runny. If you're worried about sogginess, you could spread the cake with a thin layer of buttercream before adding the mousse.

icon_smile.gif If you are afraid it will get soggy, just put a thin layer of buttercream on before you put the mousse. Then, put it on the bottom of the top layer that goes on top of the mousse. Hope that made sense!!! lol
