How Far In Advance To Make Wedding Cake

Hi all,

How far in advance do you make your wedding cakes for a wedding? I just got my first order for a wedding in November. It is a large wedding over 200 guests. Bride wants 8in top, 16 in and 4 satellite cakes that are 2 tier'd. Do you ice all the cakes the same day and decorate. Am I planning on staying up for 48 hours straight working on a cake? Any tips will be greatly appreciated.

Hey dtmc,

I start baking my cakes 3 days before the wedding OR before my freezer died I would bake my cakes a month ahead of time & freeze them. The day after I bake them I crumb coat them & ice them. Then the day before the wedding I decorate them. I get everything together that I need for the wedding on that night. I make a list of all the things I need. I have everything ready that night. The day of the wedding I get that list, start loading the van, check off the items I've loaded. I check the list again before I leave for the wedding. I have sometimes baked my cakes on a Monday coated them with simple syrup, wrapped them in saran wrap & kept them on the counter till I'm ready to crumb coat & ice. Some people don't agree with that but that's their opinion. The cakes are great!
