Sure--you can use jam or jelly as a cake filling.

I also do a cream cheese filling and icing on my banana cake...just subsitute the the vanilla extract for banana extract and add a little yellow gel paste coloring and toss in some chopped up nuts!

One word... CHOCOLATE!

I use chocolate IMBC to fill & cover, but Nutella is also wonderful as a filling (just warm it slightly to soften it for spreading0

Careful using Nutella. Make sure you tell those eating it. I am allergic to hazelnuts and Nutella sometimes gets slipped in instead of chocolate. This is a big no no for me unless I want to spend my evening with hives all over myself, or worse in the hospital.

It looks just like a chocolate filling, so until you taste it, you don't really know. I have learned to smell the filling before I bite in, but just to be safe tell those eating the cake that it has hazelnut in it.

Try this easy abvrian creme filling
1pt whipping cream
1 box french vanilla pudding mix
1C milk
1tsp vanilla extract

Throw it all on amixer and mix on high till nice and thick. This is such an easy recipe and it tastes really yummy! Ifilled my last cake with two layers of this filling and a layer of chocolate mousse, it was delicious!

I asked this same question last week on this forum. I ended up using chocolate ganache and strawberries. Fabulous!
