HI...i had this grocerry store cake...caramel coffee cake...it looked like a bundt but it was very moist and absolutely delicious (nothing to decorate, jsut to eat) anyways, on top, it had a layer of caramel...but it was still soft, but not gooey...i dont know if anyone knows what i'm talking about but if u do, and have a recipe, mind enlightening me??

ok, i was thinking to put caramels in the cake and once it bakes they'll be soft, but will they turn really hard again??

or i was thinking to make dulce de leche with evap. milk and that's sort of caramel like and just add that to the batter...hopefully it will stay creamy...

Oh gosh, I think I know the cake you mean, it has caramel pudding in it, sort of soaked in and on it like a topping or glaze. Hubby got this two different times, once it also had apples in it, yummy! I thought it was more like the cooked caramel or butterscotch pudding if this is the one you meant. I haven't tried to duplicate it yet because both times we had it, we had company, so I didn't get much of a taste other than to remember I really liked it. I think it came from either an Independant or Farm Boy (Independant does bake a lot of the desserts for Farm Boy), could even have been under the Farmer's Market label, darn I am not sure.
Does that sound like it?

I am going to have to send hubby on a cake finding mission and experiment. That was one of a very few bought cakes that I really loved, my gosh, the smell and taste. In fact I told him not to bring another one home because I think I would over-indulge!
I have tried doing searches for these but all of the cakes I find are more like the sponge puddings with the syrup at the bottom or have a caramel crunch topping.
Well, I guess we could just make an ordinary bundt type of cake and put hot cooked caramel pudding on it. Yummy, there goes my New Year's resolution!
