I have been asked to do a cheesecake wedding cake for THIS WEEKEND!!!

The person who was doing the cake had a death in the family and now the bride is stuck!!

The only problem is that I opened my big mouth and told the bride about my wedding cake which was a layer of white almond with raspberry filling with a layer of cheesecake with another layer of raspberry filling and another layer of white almond. (the cheesecake was sort of the filling in between the layers of white almond and raspberry)

My problem is how in the heck do I do this???

my cake did not have a cheesecake crust so anyone have any ideas or cheesecake recipes???

HELP!!!!!!

Maybe someone can give you a specific recipe but otherwise a great site with a ton of cheesecake recipes on it is www.recipegoldmine.com.
Is the entire wedding cake going to be cheesecake? Is she wanting it covered in anything?

the cake bible has a great recipe for cheesecake - I bake it in a regular cake pan lined with parchment - then 'dump' it out - could easily be placed between cake layers -

She wants a "traditional wedding cake" just with a cheesecake filling in between the layers of white almond cake. She also loves my buttercream so it will be covered in that.

Cheesecake will frost - just pat the sides dry with a paper towel first - and then frost away!

Very pretty. Cheesecake in the middle of white almond cake and raspbery filling sounds delicious! I had never thought about that.

Sounds scrumptous! I would think you need a very "firm" cake to support the weight of the cheesecake.

Wow, a bunch of neighbors in this thread. I've been in Richmond all my life. Sad to say, but I haven't been to VA beach in 10 years. We tend to head to Nags Head or Hatteras.

Nice to meet ya neighbors!!

SHOP is just another 4-letter word to me. I absolutely hate to shop! But, there are enough malls around here these days. And they just keep growing!!! YIKES I like it here though. I could do without some of the summer heat and humidity, but otherwise it's a nice place. Close to the ocean, close to the mountains and everything in between.

ok...This sounds wonderful...but I'm LOST! The raspberry filling goes in the white almond cake, right....and where does the cheesecake go? Traditional cheesecake used as a layer between white almond layers? Three layers per cake? I must be dull today.............. LOL!
