Need Help With A Cheesecake Wedding Cake......this Weekend

I have been asked to do a cheesecake wedding cake for THIS WEEKEND!!!
The person who was doing the cake had a death in the family and now the bride is stuck!!
The only problem is that I opened my big mouth and told the bride about my wedding cake which was a layer of white almond with raspberry filling with a layer of cheesecake with another layer of raspberry filling and another layer of white almond. (the cheesecake was sort of the filling in between the layers of white almond and raspberry)
My problem is how in the heck do I do this???
my cake did not have a cheesecake crust so anyone have any ideas or cheesecake recipes???
HELP!!!!!!
Maybe someone can give you a specific recipe but otherwise a great site with a ton of cheesecake recipes on it is www.recipegoldmine.com.
Is the entire wedding cake going to be cheesecake? Is she wanting it covered in anything?
the cake bible has a great recipe for cheesecake - I bake it in a regular cake pan lined with parchment - then 'dump' it out - could easily be placed between cake layers -
She wants a "traditional wedding cake" just with a cheesecake filling in between the layers of white almond cake. She also loves my buttercream so it will be covered in that.
Cheesecake will frost - just pat the sides dry with a paper towel first - and then frost away!
Baker2, Thanks for the tip about the cake bible! I am going to try the library now and if not then I guess it's a call to Barnes and Noble!!!
I have to say my wedding cake was DEVINE!!!!!! It was THE BEST wedding cake I have ever had! People who hate cheesecake ate it and Loved it!!
BAKERS2!!!!!! THANK YOU SOOOOOOO MUCH!!!!!! My library doesn't have it so this is great!!!!!!!
OOOOOH!!! A cheesecake filling, I misunderstood you. I thought she liked your filling and then wanted a whole one!!
Gotcha now! Hope someone has a suggestion b/c that sounds GOOD!
Very pretty. Cheesecake in the middle of white almond cake and raspbery filling sounds delicious! I had never thought about that.
Sounds scrumptous! I would think you need a very "firm" cake to support the weight of the cheesecake.

Just curious, how thick is this cheesecake filling layer?
Mine was the size of a regular cheesecake......maybe thinner about an inch or so....

Where abouts in VA are you?
..ever heard of the Northern Neck? We've been here about 8 years now..originally from MD.
..that is too funny! We didn't even think there were towers here! Really hard to keep/get a signal here! We are always joking about that commercial ..Can you hear me now?....
Tell DH to put up some more towers here...JK!!
Is Chesapeake near VA Beach?
We are about 20 min away from the Va beach! Hubby says the towers out there are awful...he fixes the cooling systems for the towers and he said that everyone out there is broken!!
..so that explains it!!
DH and I went to VA Beach two weeks ago, tothe Cavalier on the Hill...and I thought I saw signs for Chesapeake. Very pretty area!
Wow, a bunch of neighbors in this thread. I've been in Richmond all my life. Sad to say, but I haven't been to VA beach in 10 years. We tend to head to Nags Head or Hatteras.
Nice to meet ya neighbors!!
SHOP is just another 4-letter word to me. I absolutely hate to shop! But, there are enough malls around here these days. And they just keep growing!!! YIKES I like it here though. I could do without some of the summer heat and humidity, but otherwise it's a nice place. Close to the ocean, close to the mountains and everything in between.
ok...This sounds wonderful...but I'm LOST! The raspberry filling goes in the white almond cake, right....and where does the cheesecake go? Traditional cheesecake used as a layer between white almond layers? Three layers per cake? I must be dull today.............. LOL!
