What does tempering chocolate mean? I melt just a little bit of chocolate in the microwave for small decorations and it doesnt burn and so far doesnt melt or anything...but i always hear about tempering. Didnt know if i should be doing it! Thanks for your help!!

Tempering is a process where you melt all the fat crystals in the choclate, then cool it some, then bring it back to a specific temperature.
It is a fairly complex process. Baking911 has a lot of tempering instructions.

If you are melting chocolate in the microwave, and it isn't melting all the way, try adding some shortening-a tsp at a time, or paramount crystals (shortening flakes) until it is smooth and thin enough for your purpose.
