emergency here!! i need 1 tsp cocoa powder for my red velvet cake, but i forgot to buy some!!! i do have unsweetened bakers chocolate. can i substitute? if so how much? icon_cry.gif

According to this website one 1 ounce square of chocolate will be more than enough to equal 1 tsp. icon_smile.gif

Ok, 1 tsp. of cocoa powder doesn't give much chocolate flavouring. But the thing is, with recipes that call for cocoa powder they usually or least some of the time call for baking soda and there is a reaction between the two that might be desired. Which would be why the recipe would have called for the cocoa.
So this is not an exact substitution but should still work out ok. Because it is such a small amount of baking chocolate, I wouldn't worry about adjusting the fat in the recipe but had it been a larger amount, say three one ounce squares, you would have to reduce the butter or fat source used in the recipe.
Haha, bottom line is whether the cake has the 1 tsp. cocoa or about 1/9 of a square of baking chocolate in it, won't make much difference. So divide your one ounce square in half at the separation line and then take about 1/4 of that one half square.
The actual substitution is:
One tablespoon unsalted butter or vegetable oil with three tablespoons of cocoa for each ounce of baking chocolate required. So there are nine teaspoons of cocoa to a one ounce square of chocolate.
