This may be a silly question but I have to ask. I have 4 cake orders due on Wednesday and I wanted to know if I can make the cakes ahead of time and just freeze them till I want to ice the cakes? I am afraid if I do so that the cakes will not be moist and taste as good? Any suggestions? icon_sad.gif

You can freeze any flavor of cake~ Just make sure you wrap it up really good & it will be fine. Even putting the wrapped cake in a trash bag helps. So freeze, freeze away!

I have never had a problem with freezing cakes. I always brush mine with a glaze and they stay moist. I would think a carrot cake would be just fine.
