Old Fashioned Carrot Cake

My family has never been big on chocolate, but we all come running when we hear someone made Carrot Cake! Here’s my family’s recipe for a killer carrot cake!

Old Fashioned Carrot Cake

  • 3 sticks butter
  • 2 cups granulated sugar
  • 2 cups all purpose flour
  • 2 tsp baking soda
  • 3 tsp cinnamon
  • 1 tsp salt
  • 4 large eggs
  • 1 tablespoon vanilla
  • 3 cups grated carrots

  1. Preheat oven to 350 degrees. Grease and flour three 9inch cake pans. In large bowl, cream the butter for 5 minutes until light in color. Add sugar and beat until well mixed. In medium bowl, combine flour, baking soda, cinnamon and salt. Alternate adding the dry ingredients and eggs to the butter mixture. Once all mixed, add vanilla and mix. Add carrots and beat for 2 minutes. Divide batter between 3 cake pans. Cook 25-30 minutes until toothpick comes out clean. Place on rack and let cool for 10 minutes. Remove from pan onto rack and let cool completely before frosting.

This sounds just like my old recipe as well. Although, carefully advising the family and friends that I add chopped nuts. Gives it a crunchy taste. Great recipe!

The taste is excellent, but in terms of stacking and crumb coating it is not good. It's so moist that it falls apart. I'm really looking for a carrot cake that is firm and i can layer for tiered cakes. This cake is NOT that cake.
