This cake is very moist and dense- it’s also very easy to put together and easy to remember and never fails! It’s important to follow the instructions with the ingredients as that will prevent too much gluten from forming and making the cake tough.
Most Excellent Chocolate Cake
- 1.5 cups flour
- 1 T. baking powder
- 1.5 cups sugar
- 6 large eggs (make sure they measure somewhere close to 1.5 cups)
- 3/4 cup butter
- 3/4 cup margarine or shortening
- 1/2 cup cocoa powder
- 1 regular package instant chocolate pudding mix
- 2 T. vanilla extract
- Make sure all ingredients are room-temperature before beginning.Sift flour, cocoa, and pudding mix together with baking powder. Cream butter and margarine until the texture of whipped cream. Add sugar and vanilla. Beat until fully incorporated and fluffy. Add eggs very slowly. I usually break them into a separate bowl and lightly beat them, then add them a very little at a time. If mixture starts to look like it is separating or curdling, quickly add a little flour. Beat until very creamy and fluffy. Using a spatula or metal spoon, dump all of the flour mixture into the wet ingredients and gently mix together using a figure-eight motion. As soon as it is well-incorporated pour into greased baking pans and bake until toothpick comes out clean, about 30 minutes at 350.
