Lemon poppy seed
My friend and I came up with this recipe when mulling over ideas for my sisters wedding cake. I used this for all four tiers with great sucess. I did use a lemon curd filling . I mixed each batch seperately for the larger tiers increasing mixing time by 1 min. after the 10 min cool time I gently pressed down on the crowns and that eliminated any trimming. The end result was a cake dense enough for fondant yet very moist and tastey
Lemon poppy seed
Ingredients
- 1 DH Lemon Supreme Cake Mix
- 1/3 c. fresh squeezed lemon juice
- 1c. white grape juice
- 1 tsp. fresh lemon zest
- 1/3 c veg. oil
- 3 eggs
- 2 tsp poppy seed
Instructions
- in mixing bowl combine all ingredients except poppy seed. blend 30 seconds to stir then increase speed to medium and beat for 3 minutes ( 1 minute longer than usual)
- add poppy seeds and on low speed stir them in untill just mixed.
- Pour into prepared ckae pan bake accordingto pan size directions. There is no volume differences in this recipe.
- Bake until toothpick comes out clean cool on rack 10 min. gently compress crown with hands or back of large spoon the turn out to complete cooling.
What icing &/or filling did you use??
We used this for my own wedding cake and it was absolutely delicious. Will definately use again.
Did you soak your poppy seeds at all? Most recipes say to soak them and just wondered if you did or not.
