This recipe is an alternate version to my “Luv2BakeMama’s Cake Mix Extender.” It’s MUCH more healthier, SUPER-MOIST and even velvety with a Tropical Twist!
You can use any box cake mix along with this recipe and it should come out to about 40 cupcakes per box. It’s perfect for carving too after you let it chill in the refrigerator for a bit. I hope you enjoy this recipe as much as I do! =D
Ingredients
- 1/2 Cup – Tropics Best Desiccated Coconut
- 1/2 Cup – Tropics Best Virgin Coconut Oil
- 1 Cup – Flour
- 1 Teaspoon – Baking Soda
- 1 Teaspoon – Vanilla Extract
- 1 1/4 Cup – Water
Instructions
- Prepare your favorite box cake as normal (I used Funfetti), then add the ingredients for the Tropical Super-Moist Cake Mix Extender into the very same bowl. Mix for a few minutes until all ingredients are combined. The batter should come out slightly lumpy due to the coconut flakes. I was very pleased with my creation and I’m sure you will be too… my cupcakes came out deliciously sweet with a heavenly aroma, velvet-like texture and were SUPER moist!
Sounds yummy! Where do you get the Tropics oil and coconut?
Is it baking soda or powder. I'm scared it looks like too much soda for 1cup flour
Sounds YUMMY! I would like to try this for my white tier of the July 4th cake I want to do... Can you tell me if i need to change the heat setting or time? and does it work well for cakes or just cup cakes? Thanks again! Can't wait to try it!
I tried this flavor was good, but batter was very runny and didnt bake up very even on tops of cupcakes or cake. Might there be too much water added?
