This is my first try at making I am Baker's rose cake (she gives a lovely tutorial on her blog). I a have seen so many beautiful ones posted recently and I had to make one! I had intended to tint the frosting yellow, but got too excited and started frosting the cake.

I made a 2-egg cake and lemon filling from the Kate Aitkens cookbook. It is a dense cake flavoured with lemon zest and lemon extract. I would love to use this cake for strawberry shortcake. It is frosted with a flour frosting from food.com. I found this a wee bit salty, but the texture is gorgeous -- like cool whip or meringue, and not too sweet. I used butter instead of margarine in the frosting recipe. There was plenty of frosting to cover an 8 or 9 inch round layer cake, but there wasn't enough frosting to cover the entire cake in roses, so I just did the sides in roses.

I made this cake for my mother-in-law's birthday. Due to illness and poor weather for a picnic we weren't able to get together with her on the weekend. I had my husband drop off the cake this morning so she can enjoy the cake with her card making group this afternoon.
