Pumpking "cheese" Cake
Pumpkin spice cake filled with layers of no bake cheesecake filling. The icing is what I call "mock" swiss buttercream which I have flavored with ginger. On the sides are cruched gingersnap cookies and walnuts (my husbands idea). Every year for thanksgiving I would make a pumpkin swirl cheesecake, but my SIL chalanged me to turn it into an actual cake, this is what I came up with.
