I was upset I couldnt make the trip down to El Paso for my mother-in-laws 50th bday, so I made her a cake to make up for it. It was a lemon cake with a strawberry/buttercream filling. It was my first time covering a cake that was not a regular shape in fondant. It was a pain. I had to add a few layers here and there, but I made it work. I wasnt worried too much about appearance, it was the thought that counted and I was just happy it made the 8 hr drive. She loved it and my nieces and nephews didnt leave a single crumb left!
