AHey y'all I was asked to make a cake out of pumpkin bread. Is that even possible? Would I make 2-3 batches of my pumpkin bread and just cook it like a cake or does anyone have a good cake recipe that tastes like pumpkin bread and has a pumpkin bread texture? Thanks so much! -Mel

Most pumpkin bread recipes are really cakes. If yours has a high fat and sugar content, then try baking it as a cake. I have a pumpkin recipe that I use for bread (baked in loaf form) and for cake (round!) Works every time.

Yes, you can do as suggested - bake in cake pans OR

You can use pum, pkin in any vanilla, white, or spice cake mix.  It will still be a rather heavy cake - not really light & fluffy as most box miixes are.  Just add up to 1 cup of canned pumpkin (not pie mix) instead of the liquid and oil called for.  I'd also use only 2 whole eggs.
