Hard Cupcakes...everytime!!

For the past two weeks I've been battling with hard topped cupcakes...i.e. muffins....that's not what makes me happy! No matter what I do I always get hard topped cupcakes! Ive lowered the rack, added more moisture, lowered the temp on my oven. But nothing seems to give. I always get the same results. Does anyone have any ideas! IM desperate! I have to bake 200 cupcakes for delivery on Sunday and I dont want hard topped cupcakes anymore. THe inside is always moist and scrumptous but the top is always hard! HELP! icon_sad.gif

Are you using a gas or an electric oven. If it's electric the heating elements may be off. Have you tried testing your oven temp with a removable thermometer? You can pick one up just about anywhere for little or nothing and it might give you an idea as to what's going on. icon_smile.gif

No I havent don that as of yet. I will have to try that. It is an electric oven. Ive gone as low as 300 degrees and still no retribution for the measures Ive taken. :/
