I was wondering if someone can tell me how they work out how much fondant they need to cover a cake? I have always 'guestamated' in the past and been quite lucky with my guess but as I am doing more cakes I want to know if there is a system

The Wilton chart is a little high for me...I use a lot less. It does depend on how thick you're rolling it though.
Also, it takes more to roll out than it does to actually cover the cake, so always cover the biggest tier first and work your way down.
