elderly. Im getting ready to frost my cookies for a grad party. Just started reading how the raw eggs in royal icing is not safe for the elderly or very young. Does anyone worry about this?

I've always made my royal icing using Wilton Meringue Powder. However, if you want to use real egg whites without worry, buy pastuerized ones. You can find them in the egg section with the liquid eggs. I think Egg Beaters calls theirs "Just Whites" but there are other brands available, including store brand.

I take food safety very seriously. Raw eggs should not be eaten by those under 6, over 60, pg women, anyone with a compromised immune system or chronic disease.

I would never use raw egg whites for anyone. You can use powdered egg whites, meringue powder or Wilton Color Flow without any worry.

I bought the royal icing mix sold from copper gifts..its made from egg whites, so is meringue powder. I just don't want to get anyone sick from eating my cookies.

Powdered egg whites are safe. It is the raw egg whites that can cause sickness.

Thanks..how do the cookies hold up outside that have been decorated with royal icing..Im making a bunch of cookie bouquet for centerpieces that will sit outside on our tables for the party
