Here's A Good Scratch Vanilla Cake Recipe

If you in the market for a good scratch vanilla cake recipe, Ron Ben Israel's Sublime Vanilla Cake is really good WITH the addition of a 1/4 cup Instant Vanilla Pudding (I used powdered form).

Regarding the baking time, I baked my cakes at 325 for about 30 to 40 minutes. From the recipe below, I was able to fill three 6" rounds about 3/4 full.

Pro's:

1. Perfect moist/density balance. A good cake that can withstand sculpting and stacking.

2. It's a scratch recipe with the same simplicity as box cake mix.

3. I was really surprised at how great it taste, as it taste like cake and not flour.

Cons:

1. Not a true white cake
2. When it comes out it spells a little like cornbread, but once it cools down, it smells and taste like a good vanilla butter cake.


Rons sublime Vanilla Cake
For two x 9 diameter by 2 high round cake pans, greased and floured. Preheat oven to 350 F.
Mix in mixer bowl on low speed for 1 minute:
3 + ½ cups sifted CAKE FLOUR (not self-rising)
2 cups GRANULATED SUGAR
1 tsp SALT
1 TBS + 2 tsp BAKING POWDER

Add to mixer bowl and beat for 2 minutes on medium speed:
8 oz (2 sticks) UNSALTED BUTTER, softened.
¾ cup MILK

Wisk in a separate bowl:
6 EGG WHITES
¼ cup MILK
2 tsp VANILLA EXTRACT
Add to mixer bowl in 3 additions, beating for 20 seconds and scraping bowl after each addition. Bake until a toothpick inserted near the center comes out clean.
