I have a couple of cakes that will be frosted with buttercream and fondant accents on them. I will have them completed on Thurs, but the delivery is not until Sat. If I put them in the fridge will the accent pieces be OK? Do you think I will have any condensation issues that will impact the fondant accents? Any advice is appreciate.

Are you using a perishable filling? If not, I see no need to have to refrigerate your cake at all. Done on Thursday, deliver on Saturday should be just fine boxed at room temperature.

I'm really not sure how fondant pieces on Buttercream hold up at either room temp or refrigerated for any length of time. Hope someone else pipes in with an answer for you. icon_smile.gif
