My friends have asked me to make a carrot cake for their engagement dinner. I've never made one before and am having a hard time picking a recipe. Anyone have a recipe they don't mind sharing? I want this cake to be great!

I love Paula Deens Sweet baby Jacks carrot cake, I just add about 1 cup of shredded carrot to it, which my mom requested. I get rave reviews from this recipe.

i got my recipe from a mystery novel by Joanne Fluke. The aptly named carrot cake murder. this one is so great and has crushed pineapple in it to keep it moist. i'm going to be making sugar free mini bundts for thanksgiving since my mom is diabetic. she loves carrot cake and i wanted to make something mom friendly for her. sounds like the recipe will be easy to double, too. as soon as i locate my flash drive i will post the recipe since they dont list all the recipes on the website.
