What's the difference and which do you prefer?

They both pretty much do the same thing.

I have used both, and probably use gum-tex more. For me, it is part convience. I can go to Michaels and buy it, where as I'd have to buy the Tylose.

If I made my own gumpaste then I'd probably order Tylose and use Nic's recipe.

CMC and Gum Trag are also along the same lines.

I prefer Tylose but use GumTex more - as was said for convience of obtaining.

I looked up "Nic's Gumpaste" but I couldn't find it. Do you have a link you could post?
