Is it ok to put fondant over cream cheese icing and what recipe would you recommend. I normally have so much trouble with cream cheese icing anyway. I'm needing to sculpt a car cake out of red velvet cake and cream cheese icing. Any advice would be greatly appreciated.

I've done it a couple of times and it's come out fine. I use the Decorator's Cream Cheese frosting recipe on this site. It's delicious! The only thing is, it comes out kind of thick using the recipe so I usually cut down on the powdered sugar and add more milk.

Just be sure to keep your cake refrigerated.

Now the only trouble is, I've heard that you shouldn't refrigerate fondant.
