How Long Will Cake Stay Fresh?

Someone has asked me to make her wedding cake, but she will be traveling down to Florida for the wedding. She asked how long after I make it, will it still be fresh. I'm pretty sure it will be fine for at least a few days, and probably longer if it's fondant. How would you all respond?

For me, it depends on what kind of cake. My white/vanilla cakes don't stay as soft and fresh-tasting as long as other flavors like chocolate, banana, spice, etc.

I have to agree with Rincewind.....it really depends on the recipe and baking methods used.

I'd say 3 days tops for it to be "fresh" tasting.....anything over that for me starts to deteriorate.....it's still edible after a week but definitely not as fresh.

Thanks guys! I just told her a few days, but it would depend on the type of cake, and that denser cakes would last a little longer than other cakes.
